How To Color Easter Eggs
It’s fun to color Easter eggs. Pink and yellow and lavender eggs are part of the Easter tradition. And of course, kids love colors.
Learn the proper way to color eggs plus learn how to boil an egg and avoid the green on the yolk.
1. Choose fresh eggs free from cracks.
2. Commercial egg producers coat their eggs with an oil to help seal them. Wash the eggs in a mild detergent to remove the oil and to let the color adhere more readily to the eggs.
3. Boil the eggs to the “hard boil” stage.
4. To one cup of hot water, add 2 tablespoons of white vinegar, and the desired food coloring or dye. Be sure to get enough food coloring in the water to make it a darker shade than the desired shade for the eggs. (Our twelve color gel set works well.)
5. Dip the eggs in the colored solution until the desired shade is reached. For darker shades, leave the eggs sit in the dye for up to two hours.
6. If the eggs are to be eaten, keep them refrigerated.
Baker’s note: If you are going to use blown eggs for Easter (those with the egg blown out through a hole in the end of the shell), color the eggs before blowing.
If you blow the egg from the shell before dying, the empty, fragile shells will be difficult to immerse and handle in the dying water.
Learn how to boil an egg and avoid the green
Would you like to avoid that green coating on the yolks of your hardboiled eggs? You can do so if you time your cooking carefully. It’s a matter of temperature. Always use an egg timer.
Here’s how:
1. Use only clean, fresh eggs. Discard eggs that are cracked.
2. Lay the eggs in a heavy saucepan, one layer deep.
3. Cover them with cold water just to cover the eggs.
4. Bring the water in the pan to a rapid boil.
5. Remove the pan from the heat, cover it with a lid, and let the eggs stand in the hot water for 14 minutes.
6. Remove the eggs from the pan and place them in ice water until they are cool enough to handle.
Refrigerate any unused eggs.
Designing Your Easter Egg

First, cover the table with plastic or paper so the dyes don’t stain the wood. Don’t forget you need one cup for each color, extra if you are planning on mixing colors together.
After you paint the first coat, give the egg plenty of time to dry before adding a second coat or design to the egg. Empty egg cartons can be used for drying or a dish rack where you set plates out to dry.
Paper towels and rubber gloves are optional, but they can help with getting less stain all over the table and the kids.

About 5 hours before serving or early in day, in bowl, mix sugar, salt, yeast and 1 cup flour.

Yields 2 dozen.
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup (1 stick) butter or margarine, softened
2 teaspoons vanilla extract
1 large egg
2 cups (12 ounce package) NESTLÉ® TOLL HOUSE®
Semi-Sweet Chocolate Morsels, divided
Food coloring
1 (16 ounce) can prepared vanilla frosting
Colored sugars
Preheat oven to 350 degrees F.
Combine flour, baking powder and salt in small bowl.
Beat sugar, butter and vanilla extract in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in 1 cup morsels.
Press enough dough into greased and floured tablespoon to make slightly rounded. Invert onto ungreased baking sheets.
Continue with remaining dough. Bake for 10 to 12 minutes or just until golden around edges. Cool on baking sheets for 2 minutes.
Remove to wire racks to cool completely.
To color frosting: Stir food coloring into small amounts of frosting until desired color. For deep colored frosting, use paste colors available in cake decorating shops.
To pipe frosting: Use pastry bag fitted with small, plain or fluted tip, heavy-duty plastic bag with tiny corner snipped off or plastic squeeze bottle with small tip.
To decorate cookies: Frost tops with white or colored frosting. Decorate as desired with remaining morsels, piped frosting and colored sugars.

5 envelopes Knox gelatine
5 cups milk
1 teaspoon flavoring (lemon, orange, almond)
1 cup cold water
1 cup granulated sugar
2 small boxes lime gelatin, prepared as directed
Before Easter, start saving egg shells. Crack at wide end; remove egg. Rinse shell under cold water and clean out extra yolk. Dry and store in airy place.
When ready to use, set egg shells cup style in egg cartons. Dissolve gelatine in cold water. Heat milk until just barely warm. Add sugar; stir until dissolved. Add flavoring.
Divide mixture into several containers. Put a drop of food coloring in each. Pastels are prettiest. Pour the colored milk mixture into the egg shell cups. Refrigerate 12 hours. Prepare lime gelatin.
On serving day, mix gelatin with fork until it looks like grass. Put it in the bottom of a pretty clear glass bowl.
Gently crack egg shells, holding upside down in left hand and peeling with the right until egg shaped gelatine mixture slips out.
Arrange on grass. Use as centerpiece, then eat for dessert.

1 cup vegetable oil
3 large eggs
2 cups all-purpose flour
1 1/2 teaspoons Clabber Girl Baking Powder
1 teaspoon baking soda
1 tablespoon cinnamon

1/2 teaspoon ground allspice
1/2 teaspoon salt
3 cups shredded carrots (about 3/4 pound)
1 cup chopped walnuts
Frosting
1 pound cream cheese
1 stick (1/2 cup) butter, softened
2 teaspoons vanilla extract
4 cups confectioners? sugar
2 cups sweetened flaked coconut
Green food coloring, optional
Easter malted milk eggs, peanut M&M?s or jelly beans for garnish
Preheat oven to 350 degrees F. Butter and flour a 9-inch round cake pan or two regular 8-inch round cake pans.
In an electric mixer, beat the sugar, oil and eggs until smooth. Into the mixture sift together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice and salt, and beat the batter until smooth. Stir in the carrots and walnuts and pour into the pan (s).
Bake the 9-inch cake for 1 hour to 1 hour 10 minutes, or the 8-inch layers for 35 to 40 minutes, until a tester comes out clean. Run a knife around the edge and invert the cake(s) onto a rack. Let cool completely.
Make the frosting: With an electric mixer cream the butter. Add the cream cheese and vanilla extract and beat until smooth. Gradually add the confectioners? sugar and beat just until smooth and fluffy.
If using one layer, split it horizontally with a long serrated knife. Spread the bottom layer with 1/3 of the frosting, top with the other layer and frost the top and side with the remaining frosting.
In a bowl, stir the coconut with a few drops of food coloring until all the coconut is evenly tinted green. Cover the cake with the coconut and scatter the candies on top to resemble hidden Easter eggs.
